Welcome, my name is Sam Eger and I’m a hobby Beekeeper here in North Georgia. I have a few hives in both Cumming, GA and Dahlonega, GA. I started raising Italian honeybees in early 2020 to pollinate fruit trees on my property and boy did they do a great job. I went from a small handful of pears and apples to so many that the tree limbs would bend and break off.
Over the last couple of years my focus has been to learn as much as I can to help my hives stay healthy, survive the winter, and reproduce for their survival. Honey was never my focus as a hobby beekeeper as I didn’t really like the honey I would buy at the stores and I personally preferred maple syrup for my pancakes. It wasn’t until I discovered the difference local raw honey can make, especially when harvested in small batches throughout the year, that I started enjoying it.
Unique flavor of small batch harvests. Most beekeepers and commercial outfits can’t afford to harvest small batches of honey throughout the year to make a profit. They have to wait until the end of summer to pull all their honey supers (boxes that contain 8-10 frames of honey) and then extract all the honey at once mixing all those wonderful unique flavors into one homogeneous honey.
What I discovered was that if you harvest a couple of frames throughout the honey flow (the period of time when flowers are in bloom and bees are actively creating honey) and extract them ,you can get unique flavors and colors in the honey. Just like a fine wine, every honey I extract has a unique flavor you won’t find at any supermarket. Sure this process is more time consuming and laborious but once you taste the difference you’ll know why it’s worth it.
Cured my Seasonal Allergies. The silver lining of my becoming a Beekeeper was that even though I couldn’t find anything online to prove it, consuming the raw honey from my bees appears to have cured me of my seasonal allergies. When I lived in NYC and California I never had issues with allergies until I came to Georgia, land where pollen will turn streets and everything it touches a greenish yellow hue. After consuming my honey on pancakes and toast over a year, I’ve apparently become immune to the dreaded Georgia pollen.
I don’t claim that my raw honey will cure your allergies but so far most people who eat it regularly have told me that it’s made a difference in their life that they come back and buy more for a friend or family member.
See when I harvest and extract my honey I take great care to not heat it up to avoid killing the enzymes that make raw honey valuable and I also only strain my honey up to 400 microns giving you a clean honey that still contains small particles of pollen.
The theory I’ve read is that by consuming raw honey throughout the year you are slowly introducing your body to small amounts of pollen. This apparently helps build immunity before allergy season begins. I invite you to at least try and see if my raw honey can help you with your seasonal allergies.
Proceeds and working to save the honeybee. As I stated earlier my main focus was never to sell honey but doing so has given me the ability to help provide the supplements and equipment my bees need to continue reproducing in order to survive. You can ask any beekeeper and they’ll tell you that this is a very expensive hobby and selling the honey helps control the costs.
